Brewed with a traditional base of pilsner malt and wheat, plus 350 pounds of our in-house sourdough we use for our stone deck pizzas. Barrel-fermented in neutral American oak barrels, then aged with our mixed culture of various bacteria and yeast. Conditioned on Andean blackberry, blueberry, açaí berry, and black currants.
Named in honor of our favorite astrophysicist's book by the same name, this funky ale pours a beautifully deep, ruby red color with a lively, rose-hued foam head that dissipates quickly. Notes of jammy and tart berries, cherry, balsamic vinegar, melba toast, and oak intermingle with a prominently acidic finish on the palate.

I have been very impressed with with beers from this brewery I have had recently.
This beer is what you might call an imperial Kvass. It is a sneaky beer at 8.5% ABV that seems light, fruity and refreshing. Very drinkable and not boozy or heavy.
Poured from a bomber purchased at the brewery into a tulip glass. Deep purple color with an effervescent purple- pink head and good initial curtain lacing. Intense smell and taste of tart dark berries. The tartness is mellowed by the barrel aging. A woodsy background. A bit of cherries, vanilla and lime. Really a very nice beer!
