This beer is a collaboration between Vector and Hold Out Brewing, which is a brewery out of Austin.
L- Pours a bubbly golden, slightly pink hued body with a thin, but lacy head. Lively carbonation.
S-Immediate brett musty funk up front. Earthy. Then strong dank. This is followed by a sweet relish-like pickled aroma, then vegetal beet and fennel, celery, and some slight grapefruit. Other notes include: apple cider, oak barrel, and bubblegum from the brett.
T-Vastly different. Subdued, elegantly sweet, peppery, and grainy. The sweetness most definitely comes from the beet, as it is very vegetal in nature. Earthy. Notes of funky brett are there, as well as hints of oak barrel. Understated throughout. Bitter bite is present at the end.
F-Drying, delicately carbonated mouthfeel.
O-I would explain this beer as a beer that is not a saison, but has more in common with that style than it does with it's actual style. A damn solid and interesting take on a lager. Weird, yet inviting and familiar enough to not be off-putting. Somewhat vegetal and earthy too. Love the stuff they're doing here! Most interesting and intriguing brewery in Dallas.
