Poured at fridge temp. Pours a nice thick black with minimal head. The nose is wonderful. The amburana and tonka come through right away. Also coming through is vanilla, cinnamon, nuts, and a bit of bourbon.
The taste nicely follows the nose, with a few new additions. I'm getting roasted malts, amburana, vanilla, chocolate, heat, black licorice, tonka, and a bit of hazelnut. I'm not really getting much bourbon on the taste - maybe it wasn't aged for too long? I also don't think I'm picking up any of the persimmons, although I have never actually tried one before so perhaps the taste is eluding me for that reason.
The mouthfeel is a bit thin. That might be the only complaint. The aftertaste is all tonka and amburana.

Poured into a Fremont small snifter. Pours a very dark mahogany brown, appearing nearly opaque in the glass with a fine, one finger dark khaki head with great retention and solid lacing. Aroma of dark toasted malt, cinnamon, vanilla, dark chocolate and nuts, lightly spicy. Flavor is dark toasted malt, hazelnuts, vanilla, cinnamon, allspice dried plums and a hint of fruit; . Medium bodied with light to moderate creaminess. A flavorful dessert style stout with a quite exotic adjunct profile. The cinnamon notes are probably from the Amburana and Tonka beans, but a clear flavor. Good vanilla and light bourbon from the barrel. Authentic hazelnut character which shows up clearly in the finish. A unique flavor profile that is somewhat busy, but interesting and flavorful. Enjoyable. Looks and smell great too.
