Collaboration with Firestone Walker.
The concept for Temporal Illusion started as a conversation with Matt Brynildson, one of my closest friends (and brewing mentor), about the virtues of great Saison and why they’re the perfect drinking beers. Matt was fresh off the plane, from his return trip from Belgian residency, and I was looking for some inspiration from his travels, to integrate into a new Saison project at TDNE. We set our sights on 4 ingredients that, for us, define a great Saison; good yeast character, nuanced acidity, high volumes of co2 in package, and a beer fermented dry.
Of course, it was impossible to talk Saison without including Jim Crooks, master blender at Barrelworks. Together we honed in on the concept of taking a cleanly fermented TDNE Saison, and blending in some unique barrels from the Buellton cellar. The resultant beer hits the mark, and is the sum of great part parts & friendship - 88% Rye Saison, 10% Sauvignon Blanc wild ale, and 2% mixed fermentation IPA. Tasting notes of apple blossoms, Sauv Blanc petrol, mineral water, and subtle fresh cracked pepper. A great summer beer to drink now, but also a good candidate to cellar for later. Enjoy friends!
