Transit Of The Binary Star was a fermented in stainless steel with a rustic Saison yeast then, post primary fermentation, was conditioned with a house strain of Brettanyomyces. This secondary fermentation produces unique earthy and fruity aromas and ferments the beer to complete dryness. The resulting beer is complex and bone dry with notes of barn hay, tilled earth, mineral water and a touch of pear sweetness.
