Snowdrift is a West Coast IPA we brew every winter to help commemorate the miserable cold and snow of Minnesota. We hop it in the kettle with Simcoe and Mosaic to get a moderate amount of bitterness, along with some pine and fruit flavors. We ferment it clean and very dry with our standard American Ale yeast. Once fermentation is near completion, we dry hop the beer with Mosaic, Sultana and Columbus Cryo hops to create bold and aromatic IPA with notes of dank pine, ripe pineapple and other fruit, all with a moderate bitterness and light body.

16 oz can into a nonic pint glass.
L: SRM 2 Pours 99% transparent lemon yellow with a very thin soapy off white head that disappears fairly fast down to thin edge foam, light steady carbonation bubbles, medium-thick spooky looking skeletal lacing with patches.
S: Grapefruit zest, citrus pith, a very light note of hop-related dankness, caramelized malts, white grape, a suggestion of earthy farmhouse blanket.
T: Bright grapefruit & zest, fruit bread notes, pine resin, a hint of lime and lemon zest, green melon rind, confectionery sugar, a hint of grains, light cereal notes. It has a royal and very lengthy resinous linger.
F: Snappy & bright, crisp, medium-light bodied feel with a mobile center and a drying fast finish. Remains crisp to final sip.
O: This is an excellent tasting beer that is very quenching yet is fairly dry. Zesty & melon rind notes dominate the flavor. It is moderately full-flavored and has a long & flavorful lingering finish. It is outstanding in its style.
