Mom, It’s My Birthday is a triple dry hopped triple hazy IPA. We start with one of our standard hazy IPA malt bills consisting of large amounts of wheat and oats to create a super soft and full mouthfeel. We hopped it in the kettle with Mosaic to build a very mild bitterness. As we filled up the fermenter, we dry hopped the beer with Mosaic Incognito. Once fermentation was almost complete, we dry hopped it for a second time with Citra Cryo which added a ripe peach and apricot flavor and aroma. Once fermentation was complete, we dry hopped it for a third time with New Zealand grown Nelson Sauvin and New Zealand grown Riwaka hops which added an intense tropical fruit, grapefruit, and subtle white grape flavor and aroma. The resulting beer is big, extremely aromatic and fruit forward.
