Part of the Pillowhead Saison series. This version uses fluffy Belgian yeast and the finest Belgian malt, with added Citrus Blossom to give it a zing of grapefruit and citrus along with notes of white pepper and coriander.

This beer is lightly foggy once some of the yeast is added. Otherwise, it is a pale golden straw (SRM 2-3). A brief, fluffy white head leaves small patches of lace on a Spieglau IIPA glass.
The aroma is beautifully balanced between funk, floral, and sweet. Floral and funk qualities linger, leaving a very delicate wildflower scent to fill the nose.
Though only light, this beer is surprisingly bitter. The funk and farmhouse flavors shine through, with orange peel and light sweetness following. A long finish starts moderate and builds, never to yield. Light astringency comes out late in the finish and it warms nicely.
The light body and texture give a sensation of chiffon. Alcohol is as expected, while carbonation is soft and effervescently scrubbing. The dryness of the Saison is exquisite.
This is another very well executed Saison from StrangeBird. The delicacy of the beer highlights what this style can produce. I enjoyed it during a cool, drizzly afternoon in July.

Poured a nice, slightly hazed gold with a white head that fell to a cap. Saw a lot of tiny bubbles of carbonation shooting to the top. Smell is like honey, a bit of non descript citrus fruit, and coriander. Taste follows with coriander, pepper, and honey up front. A bit of citrus hides in the back. Nice tart flavor throughout. Feel is light bodied, well carbonated, and crisp in the end. Overall, a nice, refreshing drink, but at 7% it is good to slow down some.
