Fields and Fen is a double decocted Fresh Hop Lager. This beer is made with fresh Willamette hops from Skaneateles Hop Farm and local malt from Murmuration. Decoction is the process of removing a portion of the grain from the mash, boiling it, and adding it back to raise the temperature of the mash (x2). It's a long process but the result is a super complex malt backbone, with a balanced bitterness reminiscent of white pepper.

On Lukr tap at Strangebird Brewery in Rochester, NY.
This one pours a clear golden yellow color, with a small head, and lots of lacing.
This smells like white pepper, fresh cut grass, with some crusty white bread aromas.
This is really quite nice, with a peppery and grassy fresh hop finish, and a really nice nutty and bready malt backbone. It’s all very well integrated, and makes for an excellent drinking experience.
This is light bodied, very crisp and clean, with a smooth and slightly creamy finish.
This is absolutely wonderful, and I hope to have it again.
