Wendy is a refreshing barrel aged saison – a little tart, a little fruity, balanced with a touch of funk and a moderate bitterness. Notes of fresh apricot, ripe yellow plum, and apple blossom. Made with 100% Ontario ingredients, this beer rested in French oak puncheons for 12 months before being canned. Wendy is named after one of our barn cats. You can often see her roaming the fields around the brewery.

355 mL can from the brewery; coded B172 and served barely chilled. This has been in my cellar for about eight months.

Pours a clear, sunny yellow colour, crowned with at least two fingers of bumpy, billowing, foamy white head. It's in no hurry to go anywhere, requiring more than five minutes to vacate the premises; a frothy cap and tight, creamy collar live on. A thick coat of lace is also left in its wake; this is a beautiful beer. Subtle yet complex aroma with elements of oak, leather, stone fruit, grainy pale malts, lemon peel and crab apple. Mildly funky, too, with some vinous qualities.

Very flavourful for only 5%. Fruity at the forefront, with notes of apricot, underripe plum, white grape and apples; the malt backbone is grainy, with light wheat sweetness. Leather and light barnyard funk develop late in the sip, with the oak also making its presence known via some modest tannin astringency. Tart finish with leather and oak continuing into a persistent aftertaste. Light-medium in body, with active carbonation that prickles the palate and contributes to a smooth, slightly frothy mouthfeel. Amazing drinkability - I could've finished this glass in five minutes, but I paced myself for review purposes.

Final Grade: 4.08, an A-. Wendy is an impressive saison: Slake has managed to pack a surprising amount of flavour into a very small package. Spending 12 months on French oak will do that, I suppose - however, neither the oak or the funk are driving forces here. They're just extraordinarily complementary when juxtaposed with the fruity, spicy flavours of this saison - or to put it another way, it's well-engineered, with each piece fitting together like clockwork. Perhaps stuffing this can into the cellar for two-thirds of a year helped its case, or maybe it didn't - my guess is as good as yours. Either way, I'm totally satisfied with the result.

At The Cookie Bar on Drouillard Rd. in nearby Windsor; 4oz. on tap and chilled, in a flight of four beers. My fourth beer from the Prince Edward, Ontario brewery.
