I had the privilege of acquiring a Four Roses single barrel, picked and signed for good measure by the legend Al Young himself. When brewing the base recipe of Dimensions of Time, I filled this barrel and let it sit for 27 months.

The result is a decadent chocolate/bourbon molten cake. This is very much a traditional stout, which is specifically designed to showcase the barrel more than the leftover unfermented sugars (if you know what I mean). Don't expect pastry flavor or pudding viscosity. This stout is for the bourbon aficionados that enjoy a big-bodied stout with tons of naturally occurring chocolate, vanilla, caramel, leather, and bourbon.

Pours a silky, viscous midnight-black body capped with a short-lived half-finger of rich, dark khaki-hued foam settling to a near-blank surface with a large, frothy collar and minimal-no lacing clinging to the walls of the glass.

Aroma brings a dense waft of bakers chocolate accompanied by prickly bourbon oak, expressing lingering tobacco and leather into charry malts and a dark fruit subtext as sweet cocoa laced with well-aged bourbon peaks over time.

Taste offers tobacco into gooey marshmallow cut with subtle dark cherry underpinnings upfront, leaving tones of leather settling over the mid-palate as a pointed bourbon oak soaks a nuanced cacophony of evocative baker chocolate, roasty cacao, and fresh dark chocolate on the back end of the profile.

Mouthfeel shows a medium-full body laced with barrel tannins and tempered with a soft fluff of mild-moderate carbonation; dry textures underly a mid-palate trending creamy as a steadily bittering back end carries fervent yet nearly gossamer roast through the finish.

Running the gamut of intense malted chocolate to an impressive refinement of an almost singular focus; an inviting balance with a defined bourbon edge resulting in a prolific expression of barrel-aged bittersweetness.
