very cool funky saison here on second use plums, cool use of fruit, cool idea for a series of beers, and really a pretty original fermentation profile, my first from radix, who i am immediately impressed with. not much color from the fruit, maybe the faintest pink in an otherwise slightly malty looking bronze toned brew, short head from the tap but plenty of carbonation on the palate with this. the nose suggests some definite oak, some brett too, but its more acidic than farmy to me, sharp even with a lemon note to it, nice grain depth, toast, and balance, but not sweet or anything from it, woodsy to me, woody and woodsy, light pine, grape skins, saison type esters, lightly spicy, black pepper, juniper, yum! the flavor is all of this, not a ton of plum specifically to me, almost a mix of raspberry, white cranberry, and wine character, maybe slight gummy bear generic fruitiness, but its not sweet from grain its actually grounded by a nice round malt profile, a great recipe choice to counter some of the acid. there is a light floral note, a honey richness, and a nice bretty funk as it warms. its acidic the whole way, maybe more than it needs to be, at least in terms of drinking a few of them, it almost assuredly saw some wood, and has a nicely refined character overall. i think this is pretty great, the ferment is wild and unfamiliar in these proportions which is what i ultimately was hoping for from it. i would love to try some other second use fruits in this same base, cool series, hope to catch some more. put radix on the map!
