my first from these guys, never even heard of them before, this was super impressive beer, and now i am curious about tracking down more of their stuff, is it all this good? a mixed culture barrel aged saison with brett, sauvignon blanc juice, and a new zealand dry hop, funky and unique on the ferment, nice and mature, also exceedingly well refined, lively feeling, light to drink, and even memorable, i was really stoked on this! bright sunny blonde color, not hardly cloudy at all, fizzy like soda but also collecting a decent white head on it, a little unassuming in the glass. the nose is immediately farmy, dry, and with a cool brett complexion, some lightly medicinal brux character, but also a little lambicus type tang, maybe more than one strain in this, only minimally bacterial, or even not at all, nothing sharp or piquant here, and some clean pale wheat malt underneath, subtle cut flowers and white wine to it, the grapes are juicy and floral and pretty bold but also kind of playing in a similar space as the hops, light vanilla from the oak, some melon and meadow grass character from the hops, meyer lemon, very pleasant. the flavor is the same as the nose, this is light to drink overall, refreshing even for being so fermentation driven, its all about the yeasts here. a little mustiness but still so light and kind of tidy for presenting as wild, the malt is really light, its not overly estery or anything, but the grapes bring a slight perfume aspect, super fruity really through much of it, and its grounded so well by the wood. i loved this, the texture is spot on for the flavors, and this seems really professional. definitely keen to get my lips on some more formula stuff, a heck of a first impression here!
