Tequila barrel aged paloma sour. Inspired by the beloved cocktail, the Paloma, we brewed this Sour Ale with Lime Zest, Grapefruit, and Sea Salt and then aged it in Tequila Barrels. The resulting beer is refreshingly tart with balanced acidity, complex wood character, and effervescent carbonation.

Appearance: On tap in the brewery's tasting room. Very cloudy gold. Almost no foam, which was the only letdown.
Aroma and Taste: Quite sour. Lime, grapefruit, margarita salt. A hint of blanco tequila.
Feel: High carbonation as one would expect with a proper paloma. That plus the acidity makes it very crisp.
Overall: Another beer from Precarious that is exactly as they advertised it.
Pairing: I was nervous about the sourness with Mexican food, but this beer matched better than expected with a tray of street tacos. The lime in the beer complimented the lime juice squeezed over the tacos. And the acidity cut through the dry cotija cheese. If you like paloma cocktails with Mexican food, you'll like this beer with it too.
