Bottled in 12/2021; consumed on 3/9/2023
Pours a viscous, silky midnight-black hue, with a brief spurt of effervescence forcing fuzzy, pale mocha foam temporarily to the surface and fading almost immediately to a blank cap, thin, creamy collar, and minimal webs of lacing holding to the walls of the glass.
Aromas of dark chocolate accented with dark cherry esters project through heavy oak barrel tannins, leaving notes of leather, soft malt char, and burnt vanilla as smoked caramel lingers over time.
Taste opens to brownie crust and dark cocoa, with subtle almond nuttiness contrasting a sparse dark fruit inflection into a mid-palate marked with charry barrel tannins; oaky bourbon feeds burnt vanilla through the back end as a nougat edge crosses the finish.
Mouthfeel offers a rich viscosity across a lighter texturing, a medium body with lighter carbonation easing to creamy prominence and bittering roast underlying; a slick back end meanders into warming finish with boozy accents.
Pronounced barrel imparts a deepening spirit alongside chocolatey roast caked over the profile throughout; a definitive barrel-aged treat marked with inclusive depth and the rangy details of a rich base coated in deep bourbon overtones.

This one pours a very dark black color, with a small head, and a little bit of lacing.
This smells like spicy oak, dark fudge, milk chocolate, vanilla, caramel, leather, tobacco, rye, and coffee.
This is honestly of the best stouts that I've had in a long time now. The interplay between the thick, creamy body, and the long spicy barrel finish is just exquisite. There's not a thing out of place here - there's barely any of the bad boozy flavors, and all of the good booze characteristics, with that spicy heat from the oak, just leathery and caramelly bourbon, tobacco, licorice, dark chocolate, coffee, and lots of old school roasted malt character. Even though this seems like clearly a new money hype type brewery, this feels fairly old school, with that aforementioned heavy duty roasted malt character. The intense barrel character manages to round off the roasty edges with caramel, vanilla, and bourbon.
This is thick, chewy, and rich, without being syrupy, with barely any boozy heat, and a really wonderful drinkability.
I feel like this brewery just absoltely came out of nowhere. I absolutely need to get my hands on more of this beer and more of their stouts in general.

Pour is burnt umber. A deep, viscous brown that is a breath away from pitch. A whisper of brulee head spiders across the meniscus of the abyss.
Nose is tight, but promises oak and bourbon.
Strong barrel, tobacco, leather, and Baker's chocolate weave across the palate.
Body is lush and silky. A brilliant balance of attenuation .
My first beer from Little Cottage, and I am very impressed. I look forward to trying more from these guys.
