super heady wild saison type here, done with white wine grapes and a whole lot of them from what i gather, this is super complex, and the series of these was downright special, i feel lucky and thankful to have been able to drink three different grape versions when we visited last week. really unassuming in the glass, not a huge head from the tap, a sort of tame luster, pale in color but relatively unexcited and unexciting, nothing wrong with it, but obviously the red grape ones pop a little more visually. aroma is sharp and even slightly astringent at first, woody and tannic, highly grapey, like a not quite ripe grape right off the vine, more juice less wine to me in the nose, super bretted out and funky, lemons and lemongrass too, not much from the malt, but this is exceedingly complex, wow. the flavor is killer too, some more distinct wine specific character now, a light stone fruit ester too, perhaps some saison yeast was added to this long ago, but its brett dominant now, with some bacterial twang rising up late too. this warms up really well, is equal parts beer and summery white wine to me, and its even grassy and mineral forward at the end, but still so fermentation driven, i absolutely love it, even though i love the two red grape ones more. maybe i couldnt drink a ton of this, but id love the chance to try...
