belgian strong pale with brett in wine barrels, really heady stuff, another one from these guys flattered by the green glass. light oxidation and real mature farmy funk give it an almost orval-esque vibe, which is a mighty high compliment, but its true, light iodine, some earthy grain heft, tons of funkiness but close to zero acidity, really dry and well developed. i think their fruited stuff will continue to command the most attention, but do not overlook this. not quite amber colored, bronze maybe, with a short but thick white head replenished constantly by lively carbonation. nose of wet animal, burlap, cardboard, and hay, its truly rustic, a touch of middle grain sweetness to me too, autumn leaves, acorns, that sort of thing, funky brux type brett, maybe a mix of strains. the flavor is the same, wet and saturated and uniquely organic, and the ferment reminds me of orval. medium body, maybe a little bigger, but its needed to slow this down, the longer i sip it and the more i taste in it, and it warms up exceedingly well. not their flashiest, but they have something special here, and im sure this will continue to develop nicely in the bottle over time. i wish i had grabbed one for the cellar. super impressed with sovereign overall, check them out if you havent yet!
