This beer was made by resting a saison on second-use Montmorency and Balaton cherries for many months prior to conditioning with brettanomyces.

brett conditioned saison on second use cherries, on tap at standard, and there is some confusion as to which are standard and which are sovereign beers now, i know the bottles of the funky stuff all say sovereign, but their tap list is unclear, i know its the same folks, but its still tricky. this has a soft rose pink orangish tone to it, very little head but fizzy like soda pop in the glass. the nose is awesome, mature brett, very funky and sort of wild to me, way more prominent than any saison yeast in this, some light pucker too, could be all from the cherries or perhaps a little bacterial thing too. the grain base contributes nicely too, pale wheat, some body but its dry. the cherries are still obvious, juicy and tangy with some tannins happening and real neat with the brett, to me also quite floral and with hints of strawberry, cranberry, and lemon. i wish for more carbonation, it looks bubbly but it sags on the palate some, more life would improve this, and there is just the lightest cheesy linger at the end, more as it warms, not too distracting, but it makes the finish less refined to me. still, delicious stuff, cool use of the fruit again, i dig that process, and overall this is neat in a lot of ways, nice brett complexion too, may be aided by some bottle conditioning, hope to try it in that format...
