Bottle: Poured a golden color Lambic with a medium size head with OK retention and light lacing. Aroma of Tart notes with some funky esther and sweet beet notes. Taste is a mix of tart notes with some funky esther and some clearly identifiable beet sweet notes. Body is about average with good carbonation. Enjoyable and interesting Lambic but not sure beet is the best ingredient to match the flavours of Lambic.

A 750ml corked and capped bottle, 2021 vintage, with a best before date of 7th December 2026. Poured into a Tilquin stemmed glass.
Appearance: A very slightly hazy golden dark orange colour with a slight pinkish tinge, and a one finger white head that had pretty good retention, and left some lacing.
Aroma: Raw beets, vegetal, apple, earthy, soil, with light funky notes.
Taste: Tart, lightly sour, raw beets, vegetal, apple peel, red berries, oak, and funk.
Mouthfeel: Medium bodied with soft carbonation.
Overall: Tasty and enjoyable. I’m liking beets as an adjunct for lambic, quite possibly even more than rhubarb.

2022 vintage, reviewing it under this listing instead of the oogst 2022 listing on account of that looks like the european label, which might be a different blend than what was exported to the states, a little different look, so want to be sure. this stuff is really special, and its cool their beers are becoming at least a little bit more available, i was so jazzed to find this out in the wild! its a mature and funky lambic with beets in it, not the first time i have seen such a thing, a zwanze day beer comes to mind, but this is great. its incredibly tart, lactic and mouthwatering, but its also really good funky lambic at its core with a cool green glass impact, a lot of oak, and a really true and natural expression of the beets, soil and minerals and earth and root, unmistakable in aroma and even more pronounced in the flavor, i adored this, about as good as it gets, and love how inventive some of the lambics these guys do have been. just a little color from the beets, pink, not purple, a little haze, way more fizzy than expected, truly effervescent, which adds a lot to this. it smells dusty and old and musty, real rustic old world funk to it, but as sour as it is wild to me, lots of acid, even white wine vinegar, almost flemish in that way, rose hip botanical character, raw wheat coming through from the base, dried right out. the flavor is similar but the beets really pop, like still dirty and unpeeled, just unearthed, no flavor quite like that, and its well captured in this beer. this has me interested in things like fennel bulbs, carrots, and even radish in lambic beer, there is something so interesting going vegetable rather than fruit. real sour, but i could have drank the whole bottle to myself, its that interesting and that good. celebratory, as lambic always seems to be. the quality of the base beer should not be forgotten because of how unique the beets make it, this is memorable and incredible top to bottom. not to be missed and worthy of just about any price!
