neat blend here of lambic and saison, 2022 vintage here, small bottle, golden and frothy headed brew, looks absolutely gloriously well conditioned, off from clear when i pour hearty, fizzy the whole time, awesome retention on this pillowy perfect head. the nose is still lambic, funk and tang and green glass, raw wheat, some protein to this, maybe from the saison, but its muted a bit too, not real sour, not crazy mature to me, like the saison yeast is also a major contributor here, pennies, coriander seeds, lemongrass, and chardonnay there, nice complexity, grainy without being heavy or sweet, cool funk as it sits, light iodine and even an almost brine type character, mellow but compelling. lambic first in the flavor although again muted, i get the different vintages in the blend, tart green apple and gooseberry at first with the bretty weirdness, then the more heavy oak aspect and the vinous character, the grain depth of the saison rounds it out a lot and i think softens it, less acidic, almost creamy feeling, and very complex as it opens up. subtle apricot and white peach, champagne, subtle cork, new oak, pineapple, vanilla, and lemon bar, twangy and mouthwatering without being too sour to drink, epic carbonation and i like the body this retains. dry but with a pleasant recall, neat funk and green glass here too, the wild aspect is killer, faint green olive and jasmine at the end. overall fantastic, lots going on with the ferment and an exceedingly drinkable brew, aged well now but still presenting as bright and fresh, nice green glass character, elite mouthfeel, and something quite special. id love to try the saison in this blend on its own too. these beers continue to be worth the asking price...
