a fantastic example of the style, simple, clean, well made, showing even technical expertise, the nitrogenation is on point, and overall this is splendid, the kind of beer i wish more breweries would make, no lactose, no cocoa, no barrel, just a dry, balanced, easy drinking stout. i love the appearance, pretty white nitro cream inch on top of obsidian black body, looks awesome. the aroma and flavor are driven by the deep roast this has, but it stops well short of being burnt or charred or ashy, instead its got nuanced earthiness, a dark chocolate character, and in the absence of any sweeter malt in the middle, room for the yeast to come out, a traditional strain well deployed in this. the smoothness is remarkable, the lack of bitterness and finishing dryness is also impressive, and the way the nitro makes it feel going down is incredible. sometimes less can be more in beer, and this is a great example of that. very traditional, appreciably fresh, and nicely planned and executed. i am excited about this little brewery, neat space and rock solid liquid in my visit there, i cant imagine passing through baker city again without at least a quick one in here! this is a delicious irish stout.
