a light, rustic, and flavorful low alcohol saison type here done with what must be real limes, a very nice offering for late summer. golden yellow and a little cloudy, this has a high white head and a lot of bubbles, i like how excited it feels on the palate, and the little bit of acidity from the lime rises the high carbonation to make this downright refreshing. the base beer smells and tastes relatively simple, perhaps a mixed grain base but everything is pale and fermented to very dry, but it has some nice mineral character, could have some raw wheat in it, and importantly is light without being watery at all. the lime flavor is bold, not subtle in the least, but its thankfully very real, i get some zest and bitter pith which i like, the green rind note is as evident as the more familiar tangy juiciness. this picks up a neat side of the grain bill and makes this real clean to drink on. the yeast is subtle to me, especially for these guys, perhaps french originally but maybe also done cold here to keep it tempered. its not bretty or anything, but there is some subtle uniqueness in the ferment that i like, just less pronounced than in some of the others. the texture makes everything pop, and overall this is real good. perfect summer session drinker. idaho farmhouse ales continues to impress me!
edit: i believe they are calling this one citrus silo now, but that could be a name for the barrel aged version, if the original was not barrel aged, i do not recall much of an oak presence previously or even now under this name, more acidic now, maybe a product of age or more lime in this batch or something, would love to know more details so if anyone knows fill me in, i think its the same beer, either way this is limey and bright and funky and tangy and excellent!
