pretty rad beer here, carrot and elderflower, exotic, funky, i love the fermentation profile in so many of their beers, even the variance between them they all seem related, and thats rad, very farmhouse indeed, and this is one of my favorites ive ever had from them, super effervescent and fizzy from the tap, high headed and unassuming pale colored, but with a real unique aroma and flavor where the carrot is obvious, like the orange sweet part that sometimes tastes like honey milk at peak freshness, earthy and sweet, fibrous and healthful, really fresh, even crisp to me, like snappy and crunchy, awesome and authentic to a rare degree, with an exotic and uncommon beer ingredient, so cool. i dont get a ton of vanilla, although apparently its in here, fine with me, there is enough going on already and id hate to lose it to vanilla in this instance, its also quite floral, in that it has elderflower in it yeah, but maybe also like carrot flower or like queen annes lace or something, really in bloom and high summer, not overly perfumed or anything with the elder flower, a coriander seed note, toasted and earthy along with the wheat malt i think i get in here, so interesting yet also subtle and cohesive in the right ways, and the ferment bangs, funky and bretty to me, not tart really at all, lightly vinous, wild but also saison-esque, rustic and with some neat malt coming through, some real terroir in this beer. the carrot element is killer, but this would rule even without that, the mark of something quite special. this is one of the most exciting yet least talked about operations in idaho, and i cannot say enough about how good this is, love the ferment, the added ingredients, the carbonation, and really wish i could drink this all summer long, a total triumph!

Taster pour at NABA 2025. Light amber pour, small bubbly head. Earthy aroma, carrots. Taste brings notes of coriander, carrots, earthy, floral with a nice amount of yeast character.
