16oz draft served in a pint glass (?) Shows a gorgeous copper body, slightly cloudy, and boasts a proud 1" head of tight white bubbles that last and coat the glass.

Aroma is muted (see presentation), but still a peppery, fruity must and light hop notes comes through.

Flavors include all of the above with a solid malt base.

Medium feel with a nice drying finish.

Overall an eminently drinkable beer that doesn't rely on the more standard yeast notes, but still hits the mark.

16 oz can into a pint glass. Slightly hazy copper color with a rocky off-white head. Faint spicy hop aroma that belies the stronger intensity of the bitterness in the taste (but not overwhelmingly so). Medium body with a crisp, dry finish.

A surprisingly well-crafted Belgian Pale, particularly for an incubating nano that hasn't had time to specialize.
Part of the success here probably is how the Pilot Project must have taken Funkytown under its wing. The other major factor is Funkytown's inherent talent. Keeping Belgian yeasts are not a matter of luck. This requires intuition and skill.

Gym Shoe Weather Looks a pretty copper and clear; its foam is decent, but fewer protein swirls than a really active yeast. I also give points for the label: this is creative and humorous; but the copy is hard to read and needs black type.

Smells are hops in the front nose and the back nose. Fortunately for a malt-head like me in the Taste, the heavy hops don't steal the show and are more balanced than the typical American attempt at this uniquely Belgian style with many variations driven by herbs and brewer quirks. Gym Shoe finishes semi-dry. Refreshing and bubbly in the mouth.

All this makes Gym Shoe suitable for simple meals like lunch or, for me tonight, soup and bread. (I'm guessing Weather is a champion pairing with fries.) However, I also will buy a 4-pack at Pilot Project soon and test it with more subtle meals.

Finally, Funkytown has good timing. The idea is that Chicago's shitty weather is over (for 2022... or at least until December) and we can wear our Gym Shoes again and not worry about slush penetrating the canvass. But just so you know, that can happen in April.

6/22/22 Bought my 4-pack from Pilot Project and am keeping count @ UnTappd. But I am looking still for that pairing with fries.
