Inspired by a road trip to Kentucky, this IPA is the perfect marriage of beer and barrel. After aging for 5 months in Kentucky bourbon barrels, this IPA developed rich oak tannins and smokey bourbon notes. To maintain the fresh hop aromas we dry hopped after taking the beer out of the barrels. Catch the tune of Southern Twang!

750 mL swing-top bottle equipped with a regular crown cap. Bottled June 17 2015, and served slightly chilled.

Pours a lovely, clear, deep-hued ruby-copper colour, generating nearly one finger's worth of loose, light khaki-coloured head. Poor retention; it fizzles away within a minute or so, leaving behind only a modest-sized foamy collar and a few filmy wisps on the surface. I guess after 5 months in a barrel, you can't expect it to look too lively. Now the nose - that's where things get interesting. The aroma is quite fruity and juicy, with pineapple, mandarin orange, peach and black cherry coming through loud and clear, with an understated backing of caramel sweetness. Mildly oaky, with tannic notes that impart a bit of a grapey/red wine vibe; the bourbon is noticeable, but not a prominent contributor here.

Interesting flavour profile, with the bourbon flavour shining through nicely. It starts off leaning decidedly toward the sweet side - caramelized sugar, bready malts and fruity apricot all come to mind. On the back end, some oak tannin astringency comes to the surface, with a restrained bourbon flavour overlapping notes of orange citrus and floral, slightly piney hop bitterness. A touch boozy-sweet at the end, with oak tannin and floral hops lingering into the aftertaste. It tastes a bit stronger than it actually is, but that's merely an illusion - courtesy of the bourbon barrel treatment. Medium-bodied, with extremely weak carbonation levels that result in a tepid, limp, but still relatively smooth mouthfeel. I understand that after five months in a barrel, you can only expect so much carb bite - but this brew feels positively flat, which is not an endearing trait in this style.

Final Grade: 3.64, a B grade. Wellington's Southern Twang IPA is a bit of a mixed bag. It looks (and feels) a bit flat, but the beer itself is actually fairly tasty; offering just enough bourbon barrel flavour to (possibly) satisfy the people who bought it hoping for a quality BBA ale. As an IPA, it's fairly middle-of-the-road - the hop flavours are outshined by the malty sweetness and barrel features, but there is still a distinct bitterness on the back end. I don't entirely dislike this beer, but I don't think I'd return to it, or recommend it, without a few tweaks beforehand.
