Blended wild farmhouse ale. A Saison rested on heaps of fresh peach pureé, white wine must, and dry hopped gently with Hallertau Blanc. Naturally bottle conditioned with Brettanomyces. Tart, Fruity, & Funky.

This beer fills a clear, double walled pint glass with glowing opaque mango/orange. A 2” off white froth quickly collapses to 1/8” and holds a blanket over the beer. No lace is deposited, and sediment settles on the bottom of the glass.
The aroma opens with peach and a decent amount of funk. It lacks the brightness I had expected from the fruit. Earthy, yeasty, and overall duller than I had hoped. The Hallertau hops are noticeable. Not that I would have known the specific hops, rather that came from the label.
The tartness is pleasant and balanced by sweetness. The peach is again less prominent than hoped, and less ripe as well, adding distracting bitterness. The peach is more like peach skin than meat. Warmth draws out unmistakable white wine flavors. It is quite dry, while the finish is quick and mild.
It has a medium body and course texture. Alcohol is as expected, and it is effervescent as expected.
This is a decent beer, and probably would benefit from fine tuning to liven up the fruit and wine qualities. I enjoy on a cool, sunny 3rd of July afternoon. I’m looking forward to something more exciting tomorrow. Stephan Du Blanc would likely pair well with grilled muscles in garlic butter sauce.
