This collaboration with Birdfish Brewing is the "heart" of our Midwest beer philosophy. This Saison isn't just a Midwest beer, it's an almost everything OHIO beer. Every ingredient was grown in Ohio except the yeast. The star of the show is the Ohio proprietary hop called E'Desem. It was grown by @sonnyacreshopsfarm and processed by @barntalkhops. Also added some Zeus hops from Heintzelman Hop Farm. We used three types of grains grown in Ohio. Pilsner Malt from Haus Malts. Wheat from Windy Way Farms, and Flaked Wheat from Amish Country.

Hazy maize nearing orange with a puffy but airy white foam head that retains very well.
This local terroir collaboration starts herbally bitter with a little grassiness before a very airy froth brings up a mild phenolic spice that's faintly clovey, but much more balanced than you often find locally, while also avoiding any heavy brett.
Midpalate, the carbonation softly tightens up before the delicately toasty exhale highlights a uniquely delicate malt that isn't quite nutty, but also makes me think of macadamia at times. Maybe that too is the local hop expression, which otherwise makes for a very cleansingly bitter constitution.
