L- Pale gold with a very minor haze. 15mm ultra-fine bubble snow-white foam cap and good rising CO2; cap holds well 10mins later. Some sediment left in bottle.
S- That rather scrumpyish apple dry-cider aspect that you might expect from a Saison.
T- Immediately dry, very dry, drier than any mainstream white wine might go. To me it's more like a very dry/thin apple-cider; it has that austere sharpness to it. It leaves a lingering almost slightly sherberty zing on the palate. The ABV% seems entirely hidden which is quite something.
F- Well, as above. Plus, if you told me (blind-tasted) this was a 5% extra-dry apple cider brewed by a good home-brewer of cider I'd not have much reason to challenge it.
O- Hugely crisp, bright, thirst quenching - vs - comes over as light (despite the ABV%!), very light on body/malt, and perhaps sharper/drier than many would favour. Perhaps one for high-summer?
Heavy 375ml glass bottle, bought from Bacchanalia, Mill Road, Cambridge £7.85. BB: 18/05/2032. Now I get to read the lable... Ohhhh, they describe it as a 'golden sour', makes sense now. Barley, wheat + oats + Brettanomyces [Brett yeast] ... produce a 'citrus, stone-fruit and growing funk'. Refermented with buckwheat honey'. Well I'd not noticed all of that going on.
