On tap at DeCicco sleepy hollow. Pinkish yellow straw with almost no head. Mild funk aroma dry with hints of grape and cinnamon. Mild finish light flat body. I hope they served me the right beer.

neat blend here, my first from these guys, french saison from the source, and, go figure, its wild (at least partially), and not brewed with the same old cultured french yeast strain that so many american brewers are using to make overly clean and estery saison, i always wondered if that actually was a french phenomenon or not. question partially answered i suppose, and this really is lovely, green glass, awesome bottle conditioning, super light beer overall, wood aged spontaneous beer with viognier grapes blended with fresh farmhouse ale, sweet! real blonde from the bottle, fizzy and super active and high charged, holding a spritzy inch of white bubbles, and it stays pretty clear, even as we get all the way to the last drop, there isnt a big ring of sediment in here or anything. green glass and wild funk to the nose, fresh and mature at the same time, super light apple cider, fresh green apple, green grape, less sweetness than expected from the viognier but a definite white wine aspect, enough oak, simple and very light grain base, tangy without being sour, unique on the ferment but quite subtle too, this isnt lambic or anything like it. slightly floral up front with light wheat and maybe some pils malt, high minerality, almost saline to me, white wine fruitiness abounds, green gooseberry too, lower acidity than expected, quite clean for being spontaneous, not super bretty or funky but also not young, it has a wooden maturity to it and is very very dry. almost a wine yeast note too, light saison spiciness, lightly musty too, but definitely unconventional yeast doing the work here, new to me in that regard, tempered as it is in the overall flavor. this is crazy light overall, super effervescent, refreshing for what it is, and light in body, tidy and easy, summery and perfect for a patio evening over some hands of cards with my wife. i am excited to have another one of their beers in the fridge to try, and this really puts these guys on the map for me, really great quality, a unique blend, an awesome ferment, and a fine showcase of what this fruit had left to give. delicious and totally drinkable, spendy but worth it.
