Dark ale featuring violetta barley, malted spelt, cluster and nugget hops and chaga - a mushroom found on birch trees. Fermented with a saison yeast but the flavor profile is much more low key and smooth than the average saison. As always re-fermented and conditioned in the bottle.

Appearance: Pours coffee colored with a two finger head that fades to a ringlet; a few spots speckle

Smell: Rustic and woodsy, with a toasted grain and herbaceous aspect that has both a mushroom and a sassafras element

Taste: Toasted grain with a hint of chocolate; the sassafras takes over in the mid-palate; the sweetness is delicate so the overall impression is somewhat herbal

Mouthfeel: Medium body with moderate carbonation

Overall: I kept trying to find the mushroom flavors and kept coming up with sassafras; I do like it, though
