Farmhouse - style Pale ale brewed with spelt. Fermented and matured in neutral oak barrels with our distinct yeast culture. Dry hopped with Michigan grown Cascade and Zuper Saazer from Hop Head Farms.

I'm becoming more impressed with Sundial with each bottle. This is only my fourth, but each has been from a different style in the Belgian tradition... and Sundial has been figuring it out.
Additional Overall Hugs for Floret as it was a perfect pairing with tonight's basil pesto on pasta. The hops cut through the oils and Floret's herbs played nicely with the pesto. Its dry finish also complemented the heavy parmesan I put on the plate.
While Floret could have had more active protein swirls, it still Looks like a healthy yeast some 18 months after the release. Smells are mostly barnyard and lemon and oak barrel. Tastes are more acidic, but that's the vinegar needed to cut through the olive oil. Glad I only drank half tonight and I expect Floret to improve the leftovers tomorrow.

Cloudy darker yellow pour with a full white head and decent lacing. Musky and light barnyard funk with oak, rustic grain, and lemon nose. Taste adds, lime and grapefruit, graininess is not as pronounced, the lemon is huge. Sour and more acidic than expected, funk balances enough though, hops and yeast combine for a drier and more airy finish.

Bright gold with sharp clarity, becoming a hazy saturated orange tone on the second pour. Visible carb trails and lasting foam, a sheet of lacing forms in the glass.
Noticeable dry hop aroma, botanical eucalyptus, tropical lychee, citrus grapefruit zest. Light brie rind funk in the periphery. Complex and unique.
Taste is tart and fruity, lemon lime reminiscent of calamansi fruit, also tons of grapefruit and light hop greenery. Light oak and mild farmhouse funk linger in the aftertaste. Bright and crisp, with an interesting layer of complexity from the light botanical hop character. Effervescent and crisp, well carbed and light bodied. Easy drinking.
Overall this is another nice wild ale from Sundial after Pied de Cuve. Looking forward to trying more of their future releases.
