i was absolutely shocked to learn that there is no dill in this. it blows my mind. it definitely tastes like pickle juice, like good pickles, fermented ones. apparently its all sorachi ace hops, which to me have always been more like lemon curd and green tea than dill, despite what others say, but in this context i get dill all the way, maybe something to do with when they are added or what the temperature might be, but its all dill here for sure. the sourness is cool, its like the vinegar tang of the pickle brine itself, no more, no less, and with the fresh drill character from the sorachi ace hops, it actually does taste just like pickles, which sounds gross for beer, but its actually awesome, to the extent that this is not a novelty at all, and i would in fact drink several glass of this happily! wow, such a cool complexion, cant believe there is no dill. these hops are awesome, on top of the dill character there is a vegetal freshness and some cool bitterness, its great! the whole thing is light and summery and really unique. nice job with the souring, very very cool beer here! unexpected from these guys, who are usually more serious than playful. my gal and i both loved this!
