a righteous collaboration with ale apothecary, dude used to work at deschutes apparently, and this is for their 30th anniversary. its a graff style, which i always thought was an apple ale, where part of the fermentable sugar was apples, but here it sounds like its a blend of a wild fermented cider from deschutes and a specially made ale from ale apothecary, blended together after fermentation, if i have it right. the beer has a nice amber color to it from the little bottle, a high white head, and a very cool nose of wild yeast tang and funk, tart apple skins more than sweet cider, and light vinegar sourness and toased bread. the apple is unique because its still really front and center in the flavor, paired well with the malts, but overall the beer is dry for what it is, and doesnt taste fruited in the traditional sense, which i really like. some white and red wine notes alike, a little higher order alcohol coming through, biscuit from the malt, molasses and maple notes too in the grain, and some cool wild funkiness that is lambic-esque in the nose and more tart saison in the flavor. some bacterial element at play for sure, but nice with the tangy apple skin aspect. i really like the nuance, all the flavor layers, and the high carbonation, this is a cool use of apples in beer, really as cool as i have known, and its a neat local collaboration here. they used some heirloom apple varietals in this, and it certainly tastes unique and terroir forward to me. i love that this exists, and that we got to drink a bottle at the ale apothecary tasting room in bend, really unique drink, perfect for fall!
