Mexican style cerveza that was inspired by a trip one of our brewer’s, Grant, took to Oaxaca Mexico. This easy drinking cerveza was brewed with small amounts of smoked wheat, corn, and rice. We threw in a pinch of salt and conditioned the beer on black limes

For a unique twist, I've chosen to delve into a Mexican Lager with smoked wheat malts and salt, finished with the intriguing addition of black limes. These black limes, a rare ingredient often reserved for the culinary world, bring a dynamic and captivating element to the beer's flavor profile.
As I prepare to taste this beer, anticipation mounts. Served in a Belcher glass at a refreshing 42 degrees, the pour unveils a frothy and foamy head with above-average retention. In this beer style, retention is typically non-existent, making this a delightful and unexpected surprise. After a slow dissipation, the glass is adorned with loads of lacing. The beer's color is a pale straw with a light golden hue, charting around SRM. The clarity is crystal, with lively carbonation bubbles dancing to the top. The appearance of this American Adjunct Lager sets the gold standard.
As I pour the beer, the room is filled with the fragrant aroma of lime. Bringing the glass to my nose, I detect a hint of green apple, a touch of sweet corn, and a subtle smokiness. The hop profile is delicate, with notes of floral blossoms and fresh grass. Other aromas include light rice, a hint of malty sweetness, and a gentle toastiness. The overall impression is one of cleanliness and balance.
The flavors unfold with a medley of limes, salt, a hint of green apple, toasted cereal grains, a whisper of smoke, sweet corn, lightly toasted malts, mineral, and a subtle earthiness. The hop profile adds a touch of floral esters, grass, and light herbal notes, all in a harmonious balance.
The mouthfeel is slightly carbonic with a dry finish. The body is light and has medium-carbonation.
I am enjoying this beer. The flavors of this beer blends seamlessly creating a unique experience. The whisper of smoke lets you know this is not a main stream beer. The limes comes on the back, like that corona lime crap, but not offensive. I hope Deschutes brews this beer and distributes. Fantastic beer!
