In the beginning... Heavens and the earth... First created man, ...then woman... And on the seventh day, he drank hazy IPA. And it was probably brewed by Waco Ale Co.
7th Day IPA uphold such hoppy standards, first pouring pale gold and laced with a tarnish cloud of grain. A citrusy scent drifts toward the nose with a background of tropical fruit, berry and damp sod. A grain sweetness then coats the tongue with cereal, honeysuckle and hints of shortbread in a crisp but malty early palate.
As the hops flow onto the middle palate, its the taste of white grapefruit, lime and orange peel that create a botanical and zesty taste. A followup of dried pineapple, passionfruit and kiwi make way for gooseberry and white grape for a juicy overall fruity hop display. Trending herbal, grassy and downright dank, the late taste is bitter with verbena, green tea, weathered sod, dank herb and spruce.
Medium bodied and trending lighter and drier for most hazy ale, the beer exposes some of the more earthy, pungent and unpleasant vegetal hop flavors that plague the finish and its medium length aftertaste.

Clear and amber in color. Head was barely there and faded quickly. Nose was piney. Taste was a bit off. Almost a silicon taste to it. Saving grace from taste was a hit of piney bitterness.

The quintessential IPA in my opinion: great combination of hop flavor but with a balanced take on the bitterness at the finish. Beautiful head, nice lacing, a subtly spicy finish... just outstanding! Definitely give it a try!
