Growler filled on 9/30/23; consumed on 10/4/23
Pours a clear, brilliantly deep honey-gold body topped with multiple fingers of dense, fluffy, white foam; good head retention leaves a finger of cap, impressive, frothy collar, and comprehensive coating of chunky rings of lacing encircling the walls of the glass.
Aroma features honeyed white bread as vividly airy lager yeast courses and an underlying minerality forms; notes of toast meet a wisp of black tea, while peppercorn esters linger through tinges of grass and grain silo across the bouquet.
Taste offers an extensive minerality upfront as fresh bread dough meets semi-bitter grassiness; wheat toast over the mid-palate leads into soft honey glossing over the back end as pillowy lager yeast sensations wash through the finish.
Mouthfeel shows a medium-light body and a delicately rounded fluff of moderate-high carbonation; ultra-crisp textures yield an airy flakiness over the mid-palate, while distant bittering in the backdrop settles to an amplified dryness on the swallow.
A refined, airy autumnal essence defines this unique, almost explorative take on a Festbier marked with rustic edges and predominant grainy, yeasty inflections throughout; a progressive approach to the style, marked with traditional inspiration.
