Oktoberfest-Inspired Märzen
The beer of choice for those that seek malt - brewed with several varieties of German malt and a multi-step and single decoction mash regimen. Hopped at two points during the boil with Whole leaf Hallertau Mittelfrüh. Open fermented at 10°C with WLP830 and cold conditioned at 0°C for eight weeks.
Tasting notes - dried dark fruit, small tones of baking spice, and an herbal hop expression

Pours a clear, impressively deep coffee-hued copper body capped with multiple fingers of thick, fluffy, off-white foam; good head retention leaves a slight layer of cap, modest, creamy collar, and a healthy spatter of chunky, webby lacing spread across the walls of the glass.
Aroma offers taut yeast, black bread toast, and dried raisins, with minerality crusting into heavy roast interludes as dry brown sugar meets burnt malt essence, suggesting a touch of coffee grounds as airy yeast resumes on the back end of the bouquet.
Taste shows freshly toasted brown bread sporting tinges of brown sugar upfront, steadily expanding to raisin, lager yeast, and burnt muffin edges over the mid-palate while an herbal hop inflection marks the back end of the profile.
Mouthfeel brings a medium-light body and a rounded fluff of moderate-high carbonation, remaining clean and dry before peaking with ample crispness and a distant grit meandering through the finish.
