Inspired by our favorite Dunkel made in the Franconian countryside - Brewed with a blend of Munich malts and a small amount of roast malt. We used a three decoction mash regimen and incorporated several additions of Tettnanger hops in the kettle. Fermented with a Southern German lager strain at 10°C and cold conditioned at 0°C for seven weeks.

Pours a crystal-clear, deep, dark mahogany hue capped with multiple fingers of rich, beige foam; great head retention leaves a finger of creamy cap, large, frothy collar, and comprehensive coating of chunky, soapy lacing spread around the walls of the glass.
Aroma offers waves of brown toast with nutty malt underscore, sporting accents of dried cherry into caramel wafer and a bready malt subtext lingering throughout.
Taste brings bread crusts upfront and a subtle minerality advancing, leaving tinges of fruity esters meshing with toasted caramel through the mid-palate with dried cherry trailing into blackened toast settling through the finish.
Mouthfeel shows a medium-light body and a moderate-full carbonation; a flaky dryness cedes to a semi-bitterness past the mid-palate and yielding cleaner contrasts into the finish.
Earthy bittering meets wisps of yeasty sweetness in casual unison, peaking at wafer subtlety and a relaxed dark fruit accent to perpetually palatable results.
