Out of the Ashes is a series of limited release beers that showcase the varied and unique flavors and aromas delivered from malt smoked over wood-burning fires. The first member of the series, Rauchbier, features 100% smoked malt. The malt smoked over beechwood is intensely aromatic, and the malt smoked over oak imparts a smooth and rich sweetness.

22 oz bomber bottle.
Smokey aroma with a strong of odor of bandages. The flavor is much better but still not very good. Moderately Smokey. Near medium body.

Pours crystal clear, amber gold (SRM 4.5). Fine carbonation builds a short, rocky, white head that leaves rings of lace on a Spaten seidel glass. Yeast was left in the bottle.
The aroma is smoky, reminiscent of a Bamburg beer. Summer sausage is accentuated by caramel initially, however, the smoke becomes less pronounced as it warms.
Caramel flavors are offset by a modest background of burnt toast. This one is slightly sweet, but otherwise balanced with little character and a brief, mild finish.
A light body with prickly carbonation and relatively dry.
Fort Collins has produced a decent Rauchbier for relaxation. Nice with smoked pepper-jack cheese. Modest development of layers, this one lacks interest, but is fine for an afternoon after a long workday.

Fort Collins Brewery - Out Of The Ashes: Rauchbier [Smoke Beer] (22oz ---> Stemless Wine Glass)
Every other smoked beer I can recall that I've tried has been a porter or another darker variant, so I was quite surprised when this smoothly poured a yellowish light gold with plenty of carbonation... A rocky head rose quickly to about an inch and a half - but died away in a similar fashion, leaving NO lacing, nor retentive cap... A damp burning wood is the first aroma present, with an almost sweet malt aroma shortly after, as well a touch of wheat biscuit in there also... Usually I describe the first nuances as it hits my tongue and move through to the rest of the drink - this beer had my palette so intrigued, I couldn't tell you my immediate tastes... What I do know is as soon as I had a mouthful of brew, it was a tangy bbq smoke flavor, and as I exhaled, the tastes of well burnt coals coated my mouth... That almost velvety smokey coal finish lingered well past the light hop bitterness that does a fine job presenting itself ever so subtly amongst it's smokey counterparts... But to leave no stone unturned; upon further sips I took note that the semi-sweetness in the malts were the first tastes to crop up as the beer is first enjoyed... The mouthfeel on this beer is quite light compared to that which was expected, but that was merely assumptive on my part, as this was my first true Rauchbier... Light carbonation lends itself well to the gameplan of allowing the smokey elements to slowly develop a "larger than life" (in respects to the beer) role in the brew... As this beer was different in almost every area I had expected, minus the smokey taste, I must say that I'm pleasantly surprised in everything it had to offer and am excited to venture further into the Rauchbier style... Another good brew - Cheers!!

Clear, pale yellow body topped with a foamy, sticky white head. Fair smoked aroma. Flavor starts midly sweet with a slowly appearing taste of smoke building up midway and on through the finish. Medium-heavy body; clean finish.
A nice, easy going smoked beer. Subtlety is the game here. The smoke flavor is relatively mild and blends well with the malt sweetness. Nothing will blow you away with this beer, but most smoked beer lovers will probably find this a good choice.
