Our rotating Wild Ale that aims to showcase the magic between a single hop varietal and our Native Wild Yeast. Brewed with locally grown and malted barley and hopped exclusively with Sabro grown in the PNW.

Can pour.
A straw yellow pour with a white head with good retention and lacing. The nose has notes of Brett immediately noticeable, with a blend of clove and fruity pineapple, bright and clean, which actually provides a nice base for the light coconut notes from the Sabro hops. The clove does take on a slightly sharp edge, mildly pungent and with hints of plastic. Mild straw notes, but otherwise, no malt character. The nose occasionally reminds me of 2 year old Orval.
The palate opens with a mild, quenching acidity, mildly lemony, with a strong undercurrent of funk. A blend of barnyard, horseblanket, a definite clove and mild plastic note are present. Funky preserved lemon, mild pineapple complementing the coconut notes from the hops as well as some light grass. Drying, tart, quenching and slightly watery on the finish. Very good, though more fun to deconstruct than to drink.
