Simcoe is the OG sexy hop. It’s a hop that’s been the centerpiece of so many iconic hoppy beers since it was released in 2000. We use it in a lot of recipes but have never really showcased it, until now. Bittering, flavor, and aroma additions in the kettle of 2022 Harvest T-90 were followed by a large addition of a brand new experimental hop product from YCH called Trial 702 Simcoe. After fermentation it was dry hopped once with the 2022 T-90 Pellets then again with 50lbs of some fresh wet whole cone Citra hops from Jackson Hop Farms in Wilder, ID. Notes of Juicy Fruit Bubblegum, peach, grapefruit zest, and pine coupled with that signature wet hop herbaciousness.

No canning date, though guesstimating around 9.20+

Poured at fridge temp into a tulip glass.
Pours a hazy bright yellow with a fine white foam cap and excellent spiderweb lacing. 4.25
Intensely strong herbaceous hop aroma. Bright citrus rind. 4
Similar intense piney and herbal/woody bitterness. Both expanded upon each as it warmed up. 4
Lightly creamy, filling body with matching carbo and heavy lingering hop oils. 4
Overall a nice fresh hop IPA, and excellent lesson on tasting exactly what Simcoe is. It's certainly something I'll be able to easily identify in the future. Not necessarily a first grab for me in the future, but I'd enjoy it again. 4
