First, our lab @sidereallabs inoculated 100# of sake rice with one of our favorite fruity Koji strains. Once the Koji rice is ready, we utilize it during the mash-in process. It's then fermented and lager aged in our foudre. The result is a crispy easy-drinking kölsch with subtle notes of tropical fruit and wood character in the background.
