unique modern kolsch here, done with lemondrop and loral hops, a cool combination for a beer like this, light and still a pretty traditional kolsch to me at its core, but these hops make it contemporary and interesting, a cool first impression from this new spot, denver beer scene always in flux and these guys are a fun addition, great space. this is blonde and clear and holds an appropriate inch of white head, looks thin and easy, well carbonated and refined. aroma here is light citrus, old world herbal hops too though, the loral doing its best noble impression, the lemondrop adding slightly oily lemongrassy character, some fruity kolsch yeast bridging the gap between these hops and the earthy german grain, clean and tidy and fresh to me, simple and balanced but also thoughtful, an appealing fermentation profile on this and obvious as a kolsch still despite the hops. the flavor agrees, fruity in a number of ways, white smarties, lemon hard candy, and faint melon, a soft ester but still old worldy, and a bready crackery mineral rich grain profile at the core of this. maybe it comes apart slightly and hints soapy for a flash when it warms up, but cold this is tight and refreshing and distinctive. light in body, fizzy, relatively fast finishing. drinkable and subtle but interesting beer, i was happy to have a sunny seat in the front window and work on a pour of this over great conversation with a long lost friend. seems like these guys are doing some cool stuff and flying under the radar still. clever take on kolsch here and technically very good.
