Bottle from the brewery. Served in a Cantillon Zwanze 2016 glass.

A - Voluminous white foam settles to a thick cap, leaving behind splotches of lace. Transparent golden body with bubbles racing upwards. Pretty brew, with nice head volume and retention for 9%.

S - Musty and lemony brett, peppery yeast, spicy oak and light vanillin, Good complexity and punch, with not a hint of the higher ABV.

T - The taste isn't as nuanced. Peppery and phenolic yeast character, with some lotion and banana notes as well. There's some play-dough character the lingers through the finish, along with some lingering acidity. Brett starts to overpower here, and it's the dirty brett lambicus variety. A bit one-note for a blend of 5 barrels.

M - Medium-bodied, oaky and tannic, with pleasant carbonation. Soft texture, with a crisp, clean finish. Quite bright and effervescent. Well-hidden alcohol; deceptive actually. My favorite thing about this beer.

D - Paired nicely with a squash soup, as the acidity cuts through the sweet starches. My main complaint is that all of these Ontario wilds are way too brett-heavy and too similar in character. Perhaps the breweries need a few more generations to develop their wild yeast blends? Superior to Cuvee I at the very least.

Bottle: Poured a light hazy blonde color ale with a nice large off-white foamy head with good retention and some lacing. Aroma of fruity Brett notes with light yeasty notes and some apricot/peach notes are also perceptible. Taste is also a mix of fruity notes with some dry Brett note and some peachy/apricot notes are also perceptible with a mild tart finish. Body is full with good level of carbonation. I really enjoyed this very well balanced beer.

Purchased at the brewery for $8.00 500ml bottle. Served at 6deg C in a tulip

A- Opens well and pours a 1" high white head that films our within a minute. Medium gold colour and unfiltered.

S- Super complex. Lemon, yeast, sweetness

T- Super complex again. This is a winner. The yeast and the touch of brett sort of thing. Very flowery. Like this one.

M- Creamy going down. Dry and crisp afterwards.

O- I like this brew. Price is a touch high but quality is there. Put it down to $5.00 and I will be a regular customer. At this price point it's buy at convenience.

Food Pairing

This nice little brew went well with..... Cheese and dill crepes with butter and whipped cream. Try some fruit with it as well.
