another brilliant beer from burdock, this one a 2016 bottle, wild saison aged on chardonnay and riesling grape pomace from what i understand. its glorious beer, vibrant bright honey colored and frosted in the glass, with a tall white airy head, lasting and lacy, with a ton of bubbles tickling my nose as i inhale its tart white wine funkiness. this is a real farmy sort of beer, agricultural might be better, with a fresh and earthy wheat base, maybe some pils malt, crackery and with a nice body, but very dry for how flavorful the malt is, and then this wonderful rustic yeast, more bretty than sour, really mature and woody, and with all the fresh sharp acidity of a good chardonnay, lime and grass notes to it, new wood, fresh and funky, crazy complexity and drinkability at the same time, each sip is both fully satisfying, but also demanding that i take another, i am almost insatiable with this, its so good! lots of fruity white wine character, white cranberry and green grape and pear, citrus too, and wonderful graininess at the same time, a beer/wine hybrid as compelling as their leela was. burdock was hands down the best beer in toronto, and i cant wait to drink more of that stuff someday! dont miss this one, limited production and super tasty!
