Faustina the Younger began as a normal batch of Sappho, our flagship German-style Helles Lager. In order to elevate the experience of our flagship single-decocted lager, we dry hopped it with our hand-selected Nectaron hops from New Zealand. After a month of cold conditioning post dry hop, we transferred it to freshly emptied Sauvignon Blanc French Oak barrels. After lagering at 2°C for just over two months in our cooler, it was transferred into one of our lagering tanks where it was slowly and gently carbonated via kraüsen*. Following several more weeks of conditioning in stainless, the lager emerged softer and brighter than its original version.
This lager is named after Faustina the Younger (130 – 175/6 CE), who was a Roman empress and wife to Marcus Aurelius. The senate awarded her the highest title for a woman in Rome, “Augusta”, due to her virtue as a wife. She also later received the title “Mater Castrorum” or “Mother of the Camp” because she travelled with her husband during his Germanic military campaigns. She was also the mother of the later Roman emperor, Commodus.
