Daedalus is our Franconian-style Rotbier which was brewed together with our friends from Icarus Brewing in Lakewood, NJ.
Crafted with German malted barley, specialty German malt, a blend of classic and new German hops, and our house lager yeast blend, this lager is soft, balanced, and complex. Double decocted, naturally carbonated, and lagered for over eight weeks, we taste notes of black currant, caramel, pastry crust, dark honey, and a clean finish. It is named after the Greek mythic figure, Daedalus, who was a brilliant inventor. While he is known for building the famous labyrinth on Crete for King Minos and the Minotaur, he is most famous for the wings he crafted for himself and his son, Icarus, to escape Crete. In the story, ignoring Daedalus’ warning, Icarus flew too close to the sun, which caused the wax on the wings to melt, sending Icarus into the sea where he drowned.

A: crystal clear; copper colored 1+ finger finely pored light tan head that receded to a wispy cap with a moderate tight collar; very nice lacing;
S: all malt; sourdough bread and caramel;
T: follows the nose from start to finish; moderately sweet throughout;
M: medium bodied; moderate carbonation; dry finish; crisp;
O: an easy drinking beer that would pair well with a wide variety of foods;

sampling a cellar temp 16 oz can poured into my pils glass. Purchased at the brewery yesterday and no date stamping on label or the can.
The beer pours clear rich amber color and a fluffy khaki colored head of 3.5 cm foams up in the glass and almost overtops the edge. Several fine streams of carbonation rise to the surface and the foam leaves dense clingy lattice when I take a sip or swirl the glass.
Aroma is very malt forward with caramel and toasted dark bread mixing, not really a sweet aroma and only a faint hint of spicy hops. No hint of the ABV here.
First sip reveals a very smooth textured medium bodied beer. Carbonation is soft and gentle on my palate. Easy drinking beer that feels very nice on each mouthfull.
Flavor is toasted dark bread malt and light caramel throughout. Malt forward, but not overly sweet. I also get a bit of very mild cocoa powder and again hints of spicy hops on the finish. Never any hint of ABV and the beer is getting emptied pretty quickly this evening.
Another winner of a beer from Caius Farm Brewery. Very happy to have this spot so close to my house.
