Collaboration with Icarus Brewing and Wild Air Beerworks. Brewed with a hefty malt base of Bohemian Pilsner, Munich, Carafa II, and a few others, we boil hopped this lager with Ariana hops for a touch of floral and herbal character that would accentuate the addition of vanilla beans towards the later end of the lagering process.

Reviewed 3 days after canning. Poured into a tulip glass. It pours a cloudy, pretty rosy-amber color with a large, frothy, ecru-colored head and abundant thick lacing that lasted through the pour. The smell includes grainy malt, vanilla bean, caramel, and a whiff of plum. The taste opens with well-toasted bread and roasted caramel malt which give it a pleasant initial bitterness. But what sets it apart is the vanilla, which becomes more evident as it warms in the glass. While it plays against the roasty bitterness, the vanilla bean is far from sweet. But it adds nice depth of flavor. It has a pleasantly full mouth feel with moderate carbonation, and I really like that it wasn't brewed too big at 8% ABV. Overall, Things Behind Things Behind Things is a delight to drink. I'm glad that Auto decided to brew a Doppelbock as part of its second anniversary celebration.
