Chalice Brewing

billed as a mexican dark lager, served in a chalice which makes sense here, lighter amber color to this, not as dark as some, big bubbled airy head on it, looks lively and pretty tidy, and i dont hate it in this glassware here! aroma on this is less sweet than many, nutty on the grain side, more toasted than caramelized or cooked or anything, and without richness, its grainy but still sort of quick and light, and the yeast seems more european than mexican lager, but it works. its fresh, simple, and well proportioned, with very little hops apparent. the flavor is similar, although there is some front end grain sweetness now, light honey to it, resolved by the middle which is more baked and hearty, light citrus to the finish and the slightly crackery yeast strain, pulling the mineral profile forward and drying this out. its not quite crisp and refreshing, and the body is a little fuller than it needs to be, especially for the upcoming summer season in this town, but this time of year while its still cold i dont mind the structure. i rarely take a lime in my mexican beer, but this is one i could see benefitting from just a little pop of acidity that it would provide. solid beer, comes across as fresh, cleanly fermented, and just a tad safe. these guys seem to be off to a pretty solid start, cool space, fun beers on, check them out!
