This beer was fermented entirely with local micro-flora that Gerard collected from berries and flowers within a block of the pub. We are very excited by this experiment, the local yeast tastes pretty darn good.

Draft offering on tap at the source. The brew appears a clear golden yellow color with a white cap that fades slowly leaving webby lace patterns on the glass.
The smell on this is wild and tart with lemon notes before giving way to fruity esters of alcohol.
The taste includes a bit of pepper and a dry bready grain flavor before the onset of minerals. A dry fruit note like pear is noticed as it warms as well as a little herbal and bitter edge.
This is a light body brew with a light amount of carbonation. Overall, if you consider how many directions of wrong this could have gone using a wild cultivated culture, it really is not that bad. Not good either really but tolerable and worth the experience to try it at least once.
